<P align=center><FONT face=Verdana><FONT size=4>1. 冷凍毛豆放入滾水中汆燙約2分鐘,撈起,瀝乾水分,裝入容器中。<BR><BR>2. 加入黑胡椒、白胡椒、鹽拌勻,移入冰箱冷藏約半天至入味。<BR><BR>3. 取出,拌入芝麻油及辣椒絲,再移入冰箱冷藏約半天,待麻油香味滲入毛豆夾即可。(若暫時不食用,可移入冰箱冷凍保存。)<BR><BR><FONT color=#800000>營養師的小叮嚀——</FONT><BR><BR><FONT color=#800000>毛豆為未成熟的黃豆,不但味美,而且營養成分豐富多樣,最主要的成分是豐富的黃豆蛋白質及纖維質,有益於預防心血管疾病。毛豆含豐富的異黃酮,其結構類似雌激素,有助緩和更年期因雌激素分泌降低引起的不適症狀,如燥熱、不安,失眠等。</FONT><BR><BR><FONT color=#800000>毛豆品種的先決條件是豆粒大,種皮黃,肉結實硬挺,顆粒大則口感愈佳。莢果絨毛稀疏而色淺,莢果含二粒豆仁以上,外觀翠綠無蟲孔病斑者為佳。可用手摸毛豆顆粒鼓的愈高,其品質愈好。</FONT><BR><BR><FONT color=#800000>若使用新鮮毛豆,汆燙毛豆時可加入八角1粒去除豆菁味,或是汆燙好的毛豆也可以用菊花水、鹽、黑胡椒粒浸泡入味呈現另一種素食風味。若是使用新鮮的毛豆可用少許的鹽搓除表面的絨毛。</FONT></FONT></FONT></P></TD></TR>
